Mostly just what I learned in class and from classmates. I did take a little from that tut though, like his method of putting scratches in.
I modeled the whole thing in Maya, then unwrapped and grouped the UVs based on location. So the entire head has one map, as does the chest/shoulders, the arms, the waist, the backpack, and each of the legs. Then I'd just texture in Photoshop on one screen, and occasionally refresh the materials in Maya (using viewport 2.0) on my other monitor to see how they're looking.
