Just curious, why the grey/white/black step? Do you make them in shapes or do you paint it behind the line work?

It's actually to establish values first before filling in the colour palatte. Values are as, if not more important than colours. Also, it's easier to do it this way because the artist doesn't need to choose the specific shade of colour to use to maintain a consistency across the painting. They can just add a colour layer later on, which is much faster.
Watch a few speedpaints; You'll see that most artists utilise this step. The colouring step usually takes much less time to do than value planning.

Nice, thanks for showing this. Pretty straight forward in how you went about it. I need to do it do way more. I often get too caught up in bringing in details or too many colours all at once and it turns into a big mess.

How is step 2 used for step 3? I can't see how planning out values could be bad in any case, but is it just used as a guide when blocking in color?Β

Think it`s planning layers- things over or behind smth are coloured, it make's them more visible, also maybe it helps to create masks for those particular areas...
