That's a beautiful Black swallowtail, (Papilio polyxenes asterius Stoll)! It looks like you found it on your parsley plant.
I saw a few last summer. I tried taking them off of my fennel, but their osmeterium, (a 'Y' shaped orange structure that protrudes from a pocket behind the caterpillar's head) are really stinky!
