I use the lasso tool, along with the SHIFT key (adds to the selection) and the ALT key (subtracts from selection), then I apply a feather.
Using the history brush involves using the History Palette. The easiest way for you to find out how to use it would be to use the photoshop help. However, if that doesnt help you, please send me a note, and I'll take some screen shots and write a bit about using it (and upload it as a tutorial... which I might do anyway)
I use variations until I get the tone I want, and then press ok, and used menu -> Edit -> fade variations to fade it back towards what it was like before the variations until I get something that looks nice.
Would it help if I did this image again, but included more screenshots of the variations, selections, history, etc?

No, I just fade it normally.
It didnt take too long, probably just under an hour, but next time I do one of these, I will definitely do a detailed step by step.

It doesnt matter what order you click them, but it does matter how strong you use them (i've listed them in order of strength that I used)

Thanks! I've learned how to this sort of thing because i've always found my cameras to be an unreliable medium (they dont record colours properly) or some of my images just arent good enough because I know at the time I couldnt be bothered messing repeatedly with my camera settings.

When using photoshop, if you select the selection tool (marquee not the wand) there is a menu tool bar and there are four buttons, the first one means you can make one selection (eg, you hold down your mouse button, draw your selection, then let the button go), the second one means you can keep adding to your selection (eg, you hold down your mouse button, draw your selection, then let the button go, and can hold the mouse button down again and draw more area into your selection), the third button means that you "delete" area from your selection, and the last one is something I cant remember!!
