What is up with: What I can only describe as a river along the ocean floor coming from multiple outflow channels from the SE part of the South Island. That just looks wild.

Yeah currents can flow along the seabed just like a real river. Apparently these undersea rivers can share similar features to surface rivers such as river banks, floodplains, waterfalls and rapids. There's some pretty big ones on the west coast too, and one running north out of the Cook Strait.
Generally seabed terrain maps aren't detailed enough to pick them up, but you'll find them all over the world. With high quality bathymetry data such as this, you can see they're everywhere.
