Also, for some odd reason I always pictured Zhao as being of Irish, and all other firebenders being Japanese, not Indian, no idea why.

It's probably because his sideburns look like Irish style mutton chops. As for the other fire benders looking Japanese it is because the pure-blood members of their race all have white skin and pitch black hair; the authors took a lot of inspiration from imperial Japan and Nazi Germany when they were making the fire nation so all the pure blood members of their race had black hair, yellow eyes, and light skin making them the equivalent of the Aryan standard in Germany and cultural purity standard in Japan.
