Then what's the point of producing it? Why would Akira Toryiama spend time on a project that wouldn't expand his universe. Bardock is the legendary Super Saiyan described in Saiyan lore, his story makes everything connect.
Such as the fact that Frieza was so afraid of the Saiyans power it was all because his ancestor Chilled, was demolished by Bardock, and when Chilled died he told his crew/family to beware of a creature called a Super Saiyan. Thus creating the lengend of the Super Saiyan. It also shows how Goku was able to transform relatively easy, compared to Vegeta or Trunks. And gives us the Sayian's origin on planet "Plant" (Planet Vegeta's original name). Also in the ending credits of the episode where the executive producers are listed it says "Akira Toryiama" and in my book anything created by the creator pf the series is canon.
The story of Bardock literally makes the entire Saiyan's history and universe connect.

No it doesn't. All it does is raise more questions and contradicts the story. Here's the deal about Akira, he did NOT wrote this, only helped designed Chilled, that's all. His involvement was minimal, even less than with GT.
Let me give you a rundown on exactly why it's not canon and why it doesn't make sense as a whole:
- There is no reason given on how Bardock was able to travel back in time. It was very apparent that he DIED. If Frieza's blast made it happen, why is Bardock the only one to get sent? There was NO explanation whatsoever.
- The time traveling rules are already established in Dragonball lore. Trunks has already laid the pathway. In Dragonball's case, once you go back in time, the future you came from is unchanged. It only creates another timeline. Whatever Bardock does in the past, it's not going to affect the future he came from. Hence, Frieze wouldn't even know the Legend of the super saiya-jin.
- What happened to Bardock's Kanassian foresight? Did it just magically disappear? Kinda like him going back in time. Again, it contradicts the fact of it being a curse to him making him witness the downfall of saiya-jins. And why didn't he get the vision of becoming a SSJ it that was the case?
- Legend of the SSJ is that once there was a saiya-jin so powerfull, he became SSJ and he could ONLY maintain in in his Oozaru form and he was so crazy with power he ended up destroying himself along with the planet. Now for the sake of argument, let's say it was Bardock who turned SSJ Oozaru. According to manga, he destroyed himself ALONG with a planet. Now it's only logical to conclude that it wasn't on planet Vegeta/Plant otherwise it wouldn't even exist. See the fallacy.
This is about as canon as an average DBZ movie. It doesn't connect anything as it's nothing more than a spin-off.

Canon isn't even a real term. It's something the fans created to help better understand Dragonballs' timeline. So weather something is "canon" or not does not determine it's validity to the series, I believe anything that was worked on by the creator of the series is an official part of the Dragonball timeline. If Akira helped with "The Episode of Bardock" no matter how little then it's official. And unless Akira nullifies a part of the series like he did with Dragonball GT, by releasing different material, the material in this case being the "canon" movie, "Battle of the Gods" then anything he worked on is official in my book.

(I'll use simple words so you can keep up) If you were working on a piece of art, and your friend came along and helped, wouldn't it still be your art at the core? (it's fictional because you have no friends). Now doesn't this scenario represent how a manga artist would bring a movie into production, using his core art and a lot of storyboard artists, music directors and other people to help him. But it's still his art and it's still official.
