To be honest, I'm not seeing a way out of this. When dealing with Applejack, all Sunset, Twilight, and Sci-Twi were able to do was get knocked around and smashed about. They didn't even really slow AJ down, and it was only because she cooled off after getting her hat back that they got out of that mess in one piece.
They need to do something to cool Twilight down. Surround her with something that might distract her, something she'd never smash. Hmm...
