No, the Evangelions are not robots - they are cyborgs, grown and then implanted with link system, power modules, restrictors (which also double as armor) and some other components.
The red thing is the Core, which serves as a primary power source (distributor in case of Evas without S2 Engine) and a container for the soul, which allows pilot to syncronise with Eva. Also, in Rebuild, the Core serves as a generator of the A.T. Field and as a final point of insertion of the Entry Plug.

Actually the function of the core in Evas is left up for grabs. My thoughts for it and the S2 engine/organ are as follows
The core functions as a βblackbox/bunkerβ for the mind of whatever has one of these, in the case of an angel, they can growΒ back this bodyΒ as long as the core remains. However if one is damaged itβs EXTREMELY painful. Although it can heal. What happens if one is damaged enough is that the creature with it dies from a mixture of shock (the levels of pain being experienced are high enough that the nerves fry themselves, even with adrenaline coursing through the organism) and blood loss (the core, like the brain, has a lot of arteries, veins, and capillaries, or at least equivalents so thereβs a large amount of blood in them)
for Evangelions, the soul of whoever gets 400% synched is stuffed in there. While their body is βtangedβ (turned into an orange fluid called LCL, which is used by Eva pilots as breathable fluid/a shock absorber/the primarily component for synchronization) Yui Ikari (the mother of Shinji Ikari, on of the pilots) found that out firsthand.
An S2 is a separate organ from the core in most cases, in the cases that it isnβt it takes the form of S2 organelles inside the cells that make up the core. (Ramiel, the flying blue screaming octahedron has such a thing as well as Kaworu βTabris/Stupid Fish/Rainbow Trout/Fish/Troutβ (Rei calls him those in the fanfic Advice and Trust) Nagisa) This thing can generate massive amounts of energy without needing fuel, or at least very little, perhaps powering itself. However it doesnβt have infinite storage or instantly fill said storage. Different Angels have different amounts of power at their disposal and different recharge times for said power. S2s probably EXPLODE VIOLENTLY if their damaged enough or are overloaded.

A bit similar like the rest of the Eva's, but with one eye? I have no idea what the colour of the eye would be..

The eva has yellow eyes with black pupils, the mouth should look big and grotesque, and you can find this after shinji messes up and parts of the armor are broken.
