Dragonsanddaffodils — Chocolate winter wedding cake

Description This was a cake for a magazine article. The photo shoot was in August, a 2 1/2 hour drive away!

I made three of the chocolate lattice domes for the top just in case, and couldn't believe that all three survived the long drive.

There are sugar poinsettias (but with gold christmas baubles in the centres), a dome of them on top and between the tiers.

There is chocolate lattice also placed round the flowers.

Chocolate domino strips with cocoa butter stencilled ivy.

The chocolate lattice dome on top was made by piping chocolate over a balloon.

Hi! I was wondering if i could attempt the balloon dome piping thing for a school cake decorating project?
And I was wondering, does the chocolate stick to the balloon at all?

no, should be no problem, you could try greasing the balloon with a very thin layer of white fab

I tried it just a minute ago and when i popped the balloon chocolate went all over.

sounds like your chocolate wasn't tempered properly and hadn't set?

It can also be setting too quickly.

Don't pop the balloon, try sealing the balloon with a peg, so that you can remove the peg and gently let the balloon down instead of down with a bang

I felt that was the problem, the bang.
I just tried again and it worked alot better. Couple more tries and I should have it mastered.

The damn domes didnt work but I improvised and used the broken ones. I can send you a picture if you like? Just gotta know where to send them.

We went one better! It stayed in a travel lodge in reading for two days while we went to London and Legoland, then travelled the day after.

Only cake to have had a holiday I reckon!

I wasn't so worried with this one travelling, but the welsh cake with the dragon was a nightmare. I ended up holding the dragon, one hand on top, one underneath for the whole journey! When I had finished the exhibition, just put it in a box with a tea towel round it, and couldn't believe it survived..........could have done that all the way down there in the first place !

if you would have done the tea towel thing on the way to the shoot, it would have surely broke, only cuz its goin somewhere important.
