"Canon" basically means anything written/created by a someone. People use it on the internet a lot to refer to "canon events" in certain stories.. the most popular probably being "canon pairings".. i.e. Harry Potter and Ginny Weasley are a "canon pairing" because they actually get together in the books. Harry being a complete loser is also "canon", because he is in the books xD Whereas somebody making fan art of Harry and Draco together is not canon (it's still awesome, but).
.. but in more "elevated" circles, it's just how you refer to someone's work, especially literature. I'm pretty certain it can also mean a highly esteemed writer, e.g. Shakespeare or Lord Byron or Tolstoy etc xD People who other people with too much education like to talk about.
