Start with the head, I always do that, I build the body separately and join them almost at the end, besides plaster it's quite cheap

I'm not sure what do you mean by like clay but the separate parts are very easy to connect, just make sure you build the appropiate armature, either with pvc tubing or metal rods because of the size, and don't forget to prepare the connection head-body beforehand, maybe a hollow head.
