How are they all employees there when we've barely seen them there except for lazy Susan and Pacifica Alex Hirsch already told her story about what happened after she lost her money

Well you see unlike Lazy Susan, Pacifica, and Soos the others we don't see much. The shopkeeper, the cook, and the waitress were only seen in one episode. They also come back in Weirdmageddon but before that they only appeared once.
