Description
I put v.1, because I've still a lot of peaches I'm looking to dice up and freeze to do another one down the road. My other lattice work on pies is usually a lot more ornate. Here I was just lazy.

Simple peach pie. About 5 pounds of peaches in there.

Kitchen Tip:
Easy way to peel peaches is to score the bottom with an 'X'. Get a large deep pot (bigger the pot, longer to boil, but faster you can do the peaches. You want enough room for a peach to bobble/boil for a bit).

Boil/blanch scored peach for about 30 seconds -- if they're a firmer/unripe peach, you may leave it in for longer.

Remove and put into an ice bath (deep enough bowl of water + ice) to stop cooking process. Let them sit for a minute or two.

Skin should just peel easily away.
