If memory serves me correctly, there is ancient Roman documents that says that the "Wiker Man" comes from the Celtic tribes and that the purpose of the wooden statue is to be used for both animal sacrificing and a form of capital punishment.

If you watch the movie, watch the original one from England. It's much better in story and direction. The Nick Cage remake is a laughing joke. Rifftrax.com has an excellent riffing sound track to go along with the Cage version of it.
