thank you. and yes, it is difficult, but if you stick w/ it, learn very well how to temper, you can do pretty much anything and everything. what are the ways youve learned how to temper so far and which is your favourite?

awww lol well, there are plenty of resources, videos, information, etc on the internet. im currently trying to learn some Molecular Gastronomy (food chemistry) and so far the only resources for me are books written by those pioneering the movement and the internet lol just stick w/ it, i know its difficult, it was difficult even learning it in school, but it just takes patience.

Not really, the tempering and molding/sheeting of the chocolate is what took the longest, the mousse was just a quick mixture of melted white chocolate and whipped cream w/ some assorted sauces.

It comes easy when desserts are your forte lol. Your sweet tooth becomes satisfied by the simple tastings you do throughout the creation process. That and you have soo much to do that you don't really have much time to spare for actual consumption lol.

i think it would have looked better if it were on the rim, less brush strokes and a little more artistic brush strokes, if you get what i mean.

yes and no. I'm sorry I think I'm not good with the cuisine words like on the rim o.o
I also try to bake cakes now and then but I'm far off from being a pro like you o.o
I'm gonna try doing some nicely decorated cupcakes tomorrow for the first time >.>

i meant on the rim of the plate, its the wide band that is raised up from the actual eating surface. and about the cake thing, some decorating skills can be picked up jst by looking at a pic and trying to mimic the design, or there are actually quite a few decorating tutorials on youtube, if that helps any.

sugar is just such a versatile medium, and it comes in so many different forms. food, chocolate, plain sugar, isomalt, i just love it. it can be beaten, whipped, creamed, mixed, omg, there is just so much you can do with it.

yup, i think im gonna take some of my ideas for cakes and wedding cakes and make dummy cakes. just so i get some more practice and something to show my skills off to potential clients.
