Okay:
Season 1) Higurashi no naku koro ni
Season 2) Higurashi no naku koro ni Kai
Season 3) Higurashi no naku koro ni Rei
They're all very good. The first two seasons you must watch, they're very important. The third season, Higurashi Rei, you don't have to watch, but it's a very good and relaxing season, and it's only 5 episodes.
Season 1 is 26 episodes long, season 2 is 24 episodes long, and season 3 is 5 episodes long.
There are 6 arcs in the first season:
Onikakushi-hen
Watanagashi-hen
Tatarigoroshi-hen
Himatsubushi-hen
Meakashi-hen
Tsumihoroboshi-hen
The first four arcs in the 1st season are question arcs, and present mysteries [and lots of deaths]. The last two arcs are answer arcs, and solve some of the mysteries.
There are 3 arcs in the second season:
Yakusamashi-hen [anime-only arc]
Minagoroshi-hen
Matsuribayashi-hen
These three arcs are also answer arcs, and solve all of the other mysteries the first two answer arcs did not solve.
There are 2 arcs in the third season:
Saikoroshi-hen
Hirukowashi-hen
As I said, these 2 arcs aren't really necessary, but they're nice to watch.
