Maybe Quince was actually in love with him but accepted that he thought of her as a sister so it was a mix of "I'm in love with you" and "overly affectionate close friend".

Yeah, I've been starting to form a headcanon that they were good friends, and Quince was in love with him, but he didn't feel the same way, or didn't love her as much or in the same way. Quince knew this, and he knew how she felt. She didn't blame him for not loving her, but she asked whether she could raise his kits, so at least she could love them. Jake was fine with that, and wanted his friend to be happy and have kits to raise, so he agreed.
Still not sure why he wasn't around to raise them. I guess maybe his twolegs moved to a new home, too far away for him to visit Quince and her kits, and that's where he met Nutmeg. Strange that two of her kits ended up in homes so close to Quince later on then. They must have been close to Quince, because Quince's home and Rusty and Princess's homes were all along the ThunderClan border.

Maybe Rusty and Princess's owners were traveling near where Nutmeg lived and adopted them on a spur of the moment decision.
