I think it's an obsession to simply catch the blasted bird. Chuck Jones himself has described the coyote as someone who doubles down on his efforts while forgetting what his original goal was.

I think in one episode, it's explained that roadrunners taste especially delicious to him. Although it might also be that these traps are fun to set up.

I think it started out that the coyote was hungry enough that that tough, skinny old roadrunner looked like a Purdue Oven Stuffer. After Wile E. got clobbered a few times it became personal.

Well, there was a Chuck Jones cartoon where the Coyote EXPLAINS why he wants to catch the Road Runner in the first place. He acknowledges that the Road Runner is thin, but he also explains that the many sections of its body are REALLY tasty, like a million flavors in one.

I think it had the word "Zip" in it twice. I think it's called "Zip Zip Hooray" or something like that. It involves two kids watching the Road Runner show. One of them asks why the Coyote wants to catch the Road Runner in the first place to which Wile E. Coyote responds with good answers.
