I romanced Ashley in the first game, and honestly she wasn't so bad, but then in ME2 she is a bitch to you just for being alive. Miranda ftw!

She was, but it still felt a little contrived. I swear, I think Liara might have lampshaded it a little. I lol'ed at the increase in her bust size in ME3, though. So blatant. Almost as blatant as MIRANDA'S ASS IN YO FACE.
I didn't have a problem with the human characters, though. I liked Kaidan in ME1. Granted, the vestigial sexual tension from the aborted gay romance option was really jarring. Not homophobe, just put off by the apparent visual cues in the animation ("Commander.").

As for Ashley, her fierce temperament and wit is what's good about her. And it's unfair to call her racist. She even calls out Terra Firma on being racist. She is just distrustful and politically isolationist - she doesn't hate aliens for being aliens, but distrusts because she thinks they'll never be fully on our side.
Now, she could tone it down a bit with the poetry. Or that infamous religious argument (Okay, so you have religious beliefs, now shut up about it). But it's... telling what your stated main problem with her is. Really telling.
