Shading is tricky, it takes a considerable amount of practice and studying of real references, because it's a bit different in each situation.
The way I help my students learn is we start with the geometric solids, and view the face as groups of geometry, each figure with it's own shading, that comes together into a greater whole. It also never hurts to practice at an extreme level and dial it back as well- try some really refined Rembrandt shading or chiaroscuro and then pull it back. Look at photos, sample colors, practice, practice, practice! And references: never go into a drawing without refs, master artists know how to draw and modify what they see, and nothing informs your eyes better than pictorial references.
