Thinking about Spyro level, my favorite would have to be Cloud Spires from Spyro 3. There are certainly a lot more memorable levels in the series and I feel the Reignited version doesn't quite capture the same color palette and whimsy of the level as the original did, but it's still a personal favorite. It definitely has had an influence on my current fantasy aesthetic, that's for sure.
