I know it's silly but I have to ask: Why a deer??? Why not a gnome or a satyr or a regular centaur? Something that's an actual legend?

because the creators of that AU chose to make him a cervitaur (I believe the AU was born after a few monster-themed roleplays and deertaur was on the list of suggested creatures for roleplaying; I guess that creature suited Dipper the most because of some of his character traits, namely curiousity andΒ timidity; plus cervitaur is an adorable creature 
that doesn't mean people can't make him something different - I saw drawings of wendigo!Dipper, centaur!Dipper, werewolf!Dipper and so on, the cervitaur is just the mostΒ popularized monster form for Monfalls!Dipper
