I read over this multiple times and I think I spotted a thing you left out. In order to delete the INSIDE of what you're doing instead of just deleting the rim around the object, you have to invert again once you've incremented as much as desired. I tested it out without the second invert selection and it just deleted the area around the shape, not the inside while leaving an outline.

Photoshop has some tools better suited for this, like Selection > Contract and the Stroke layer style.
