Why doesn't the show look like this? This style is very appealing, like a perfect middle between the final product and the more whacked-out animation Klasky-Csupo wanted in season 1!

Iām guessing fluid animation styles like this are too expensive to animate?
Most 2d shows look stiff and cheap these days

I wouldn't say that exactly; to name a couple examples to the contrary, SpongeBob season 10+ and Uncle Grandpa had pretty smooth and flexible animation.

I think it's because Matt hated the animation of the earlier seasons, which was actually done by many decent animators like Brad Bird and David Silverman. Nowadays I think almost all of it is done at the Korean contractors when back then, they mostly just did the inbetweens, finishing and camera work while occasionally handling full scenes.
