I was wondering, when I select my price-paid-per-picture, do I select the content that I'm paying for from your collection, or is the content selected for me automatically?

The content is selected for you automatically, as you get access to all of it form the getgo!. For the initial contribution you get access to the entire gallery so far, and donate the amount of your choosing when new content comes up.
This is automatically billed by patreon in the beginning of each month (though only if I've posted content, and you are able to set a monthly maximum in case I post too much. You'll still get access to all pictures posted that month. If you become a patron in the middle of the month patreon only bills you for the things that are new from the time of your joining and not for the entire month).
