I think it would have been interesting to see you tamper with the exposure in-camera a bit. If it's similar to my husband's little Kodak, you should have a manual setting where you're able to manipulate the Fstop and shutter speed a bit more. The overexposure in the sunlight is a bit distracting, of course you might lose the details a bit where the sunlight is not. It'd be interesting to see it just the same.
I'm of your line of thinking. I don't really manipulate my images after I take them, but I will go in and spot tone them (clean up little dust motes, etc). In-camera is the way to go!

Hum.... I'll have a look at the camera. The only bad thing after taking this photo was having to climb back up onto the Belgian Mule I had been riding that day.
