What's wrong with Pinkie's legs in that pic? The knees are bent back as they should be... It doesn't look to me like they've reached the ankle joint just yet. Usually when they do bends like that, it seems to me more that they've enlarged the hip-knee section and the kept the ankle and hoof joints straight. In fact, it looks almost identical to the pose of the correct Rainbow Dash legs just above, and even incorrect RD to the side has the same elongated femur part followed by the knee joint and straightened ankle and hoof joints. There is a bit of distortion/stretching going on and Pinkie's... Totally a liquid in that particular pixture (chubby, gum-like) but I think they're still following their pony-joint laws.
The incorrect RD definitely has some... Length issues, everywhere. But I think the bends are okay. Just shorten that femur, elongate the shin, add a hoof join in there... Prolly wouldn't look so bad.

well I'm working on a design on fully anthropomorphic ponies (walkin' on two hooves and all) and I found myself doing those back legs mistakes ... now I'm not sure how mistaken I am...

I've never really been aware that MLP-style ponies have "knuckles". ...At least, I'll see it every now and then, but I easily forget about it. I'll have to keep that in mind...

Btw, I also know that I'm missing another piece of info... you know that last joint analogous to our knuckle? A lot of artists tend to forget that exists in ponies.

I think the Rule of Funny is applicable here; that pose is more amusing, and better conveys her mood in the scene, so it's acceptable despite the anatomical impossibilities.

Now I'm thinking if we can execute the legs to stretch out without bending unnaturally. I was probably too quick to not realize how that changes the expressio but I'm certain there are other vectors of ponies on their belly with legs stretched back... without having legs bent oddly... are there?

I still feel the application of 'rule of funny' is a bit of a dangerous move as it looks far more unusual than letting ponies rotate their 'forearms' like we can. Either way, I think I'll be more considerate of more extreme instances like that for the next edit.

I've noticed that quite a bit in a lot of artists as well though most times it doesn't hinder the overall piece. Do you plan on adding it into your tutorial?

It's not just a cartoon. It is said that there are professionals who have been trained to know what you can and cannot exaggerate, which is the central part of drawing cartoons. Though I cannot say I am such an expert myself, I believe there are reasons why some ways of drawing ponies seem 'off', and less correct. These tutorials are written to try to give some insight as to why that is, and at least tries to analyze how the FiM-style works, and any other people's styles may seem less convincing.
