But, errm, isn't the "shui" for 'Water', in chinese, wrongly written? Shouldn't the 'hook', stemming from the vertical line, be facing <<<< instead of >>>> ? o.o

technically, if you use proper stroke order for calligraphic purposes, it will naturally end up that way. otherwise, i don't believe it much matters and doesn't effect the actual meaning of the character.
