Here are the steps:
1. I Screen recorded the selected clip with Quick Time and saved it.
2. Used Final Cut Express to cut the clip down and add in and animate the text.
3. Imported the file into Photoshop, saved it for Web and Devices, and turn it into a gif.

It might sound scary, but it's easy to do. I bet if you look online, there are probably easier ways to do this, but this process is pretty simple and it's the one I'm most comfortable with.
