i had a hard time figuring it out too.
1) pick somewhere on the horse to start, like the ear, and click. a dot will appear there. then you just click around the general shape of the horse.
2) set the edit mode thing to 'edit' and then you can curve the lines between the dots to fit around the horse's body
3) once you're done with that, click 'selection from path' and copy that section. paste it onto a new layer, delete the old background, and start maniping. (:

Hey guess what? Someone on howrse.com called Pink-Lady? Yeah she just entered this exact manipulation into morgan dayne's contest! [link]
I already posted there, but you may want to check it out just in case! Like seriously, all she did was type a few words on it and she was done >.>

I made up the name, which is why I'm pronouncing it as I am. (:
And thanks!! I wasnt sure if the whole no-ground thing was going to work out but it seems to look nice.

i wasn't quite sure how to go about adding highlights since i couldn't figure out where the light source would be, so that's why the face looks a teensy bit odd. plus i had to use the clone tool a lot so i blurred the neck some more to make it blend better. i actually did quite a bit of blurring on the face but i guess it's not very obvious. O.o
