Aww, Mario & Peach, Together Forever!!! X
To me, they are so truly "Nintendo's Sweetheart Couple" and my OTP pairing which I can never forget about.
I practically grew up loving their relationship so much through out the years of playing their many games.
So what I decide to do to celebrate their amazing cute relationship more? Simple...I do this!
By the power invested in me and the Mushroom Kingdom, I now pronounce thee: "Mario & Peach"
as husband and wife. Mario, you may now kiss your beloved bride.

After what we saw in the ending of Odyssey? there's clearly no denying the fact that Peach doesn't like Mario.

I'm afraid you're wrong. Peach does love Mario. He's rescued her many times and she is the apple of Mario's eye.
Just because you saw the ending and you interpret it a wrong way, you might think to yourself she doesn't like him.
but you are wrong, Peach does love him and you should know it by now. You can't go assuming that just because you saw the ending
and thought of it that way.

Dude, she flat out rejected Mario. that is the opposite of love right there. sure, Mario's move probably would have been successful if Bowser didn't budge in and kill the mood, but that doesn't change the fact that Peach still rejected Mario. not to mention, Peach friend zoned him in Color Splash. seriously, the guy traveled the whole globe to rescue her and that's what he gets? that's cold. and then she hijacks the Odyssey. that's Mario's ship. not hers.
So Mario might love Peach, but alas, she doesn't love him back.
Honestly i expect better from Mario than shoving flowers in Peach's face in order to get her to choose him over Bowser.

Dude, I get it, I've seen the ending many times before you have, first off, relax and think it over. Okay?
Yes, the reason Peach rejected was because both Mario & Bowser were pressuring on with flowers in her face
to make a decision on who to choose, she would've chosen Mario easily for rescuing her, but Bowser screwed up the moment
causing both of them to compete for her, she got frustrated and said "enough" and walked away because
she didn't like to put on the spot like that, If it wasn't for Bowser to screw things up like that
Mario and Peach would've gotten hitched/married with no problem what-so-ever, and they would live happy as a newly wed couple.
But, just because Peach rejected does NOT mean she doesn't love Mario. In fact she does still love him and she even calls out to him
to go back home with her on the odyssey ship in the ending, Mario is happy again and so is she, in the ending he runs to her and jumps on-board the
ship after bopping Bowser in the head and he gets stranded on the moon, end of story. Mario & Peach make it back on earth and everything is good again.
Trust me, I've seen the ending many times and to my reaction, it wasn't what I was hoping for an ending for them in the story.
But, it was a little funny and a bit disappointing at first, but the thought of Mario and Peach being married was still strong in my heart for them.
Let me be for real here, Maybe it wasn't the right moment or Peach wasn't ready yet, but I firmly believe that Mario and Peach still do love each other
and that they DO love one another very very much, with that in mind. You can't say she doesn't love him back, because you would be wrong to assume that.

What more proof do you specifically need so you can affirm that Mario & Peach do love each other?
There's enough evidence in all their games. Especially one game when you team up Mario and Peach, In Mario Party 5, 6 and 8, when you pair up Mario and Peach
in a team, the team name given to them is "Cutest Couple" At first glance, that fact confirms that they are a couple. If you want more evidence, Nintendo will have to flesh it out more.
Plus, there are are SO many and I mean so many fans that affirm that Mario & Peach love each other.

Well, I don't buy that and you shouldn't either, because if you know Mario games for so long
then you should definitely know that Peach actually loves Mario. Nintendo just has a way of not saying it out loud
or fleshing out enough details on their relationship, but their hints and plenty bits and pieces that CONFIRM they are in love and they are a couple.

If you say so, pal. But, One thing is for sure and you should definitely agree with this, Nintendo has to be forward and flesh out more details of Peach & Mario's relationship more often just so you can you can be satisfied to know it's official and not go by your own assumption just because of what you heard or what you've experienced on your own. I know there is bound to be much more to their relationship to what I already know from my experiences playing their games compared to your experience. I know they are Nintendo's most recognized couple for 30 years now, and they do love each other. But, like I said, Nintendo has a way of not saying it out loud to the public. It's the same thing they do with titles like Legend of Zelda. (I know about that too.)
If you want me to explain more info I found, I can tell this for sure for a little more confirmation, Mario and Peach have always been shown to be in a romantic relationship. It is confirmed in the official European Mario Website that the two are shown to have been close companions since childhood. Mario saves Peach quite often and she usually will bake him a cake or kiss him upon her rescue. Plus, since she is Mario's love interest in the mainstream games, the two also share good chemistry when paired with one another in spin-off game titles.
