It really does depend on the artist, as annoying as that sounds as a reply XD I have been using watercolours for a long time now, even then I'm still finding new tricks of the trade everytime I use them. Watercolours, rather than most paints, it is how much you dilute the paint and the control. You can get some stunning effects with watercolour! You can also building up layers to create cool textures and colours. If you want any further advice, I'd be happy to help!

getting it smooth, and not with spots of darker color.

Try not to have too much water on the brush, combined with smooth strokes so it doesn't blotch. Start with soft layers and work the colour up ^_^ I hope this helps!
