wouldn't fully bet on it. Hippos are nasty motherf****ers. One bash would cause enough trauma to destroy a brain in the zombie. Not to mention the tough hide, surprisingly agile movement; and aquatic habits would make it much harder than it looks.

True, but never underestimate the determination of a hungry zombie, even severely maimed and dissected zombies may still pursue brains.
