I had an interesting thought... perhaps Alphys is already dead, and Undyne is hallucinating her. And Undyne is speaking both parts in this conversation. Perhaps she's been doing this since before the echo flower...
And everyone else just pretends Alphys is still alive to try and keep Undyne something remotely close to stable. So to Sans, she already sounds like a madwoman -- and that's why he's fully aware of what he's walking into...

Oh, I was accounting for the time that Page 53 mentioned -- there has been at least three months between Papyrus seeing Alphys on page 52, and it shows that other monsters have dusted already.
Alternately, perhaps the conversation heard from the echo flower was one of the last before Alphys dusted?

"Flowey" never had a soul technically when asriel died only the memories and stuff like that seemed to pass on to the flower yet flowey would still have a reaction to events he may find it fun or intriguing or maybe he finds it horrifying flowey can be scared it seems and seeing these horrible events i just wanna see HIS take on it what causes him to help Aliza later
