Oo! Tomato sauce tutorials. XD Oh, wow, if I were to create a tutorial on my family's recipe, it'd be huge and sooo time-consuming. How long do you cook your sauce? Because my recipe calls for any time between 2.5-12 hours (depending on how mild the sauce. XD)

SO LONG??? I cook my tomato sauce for around 30 minutes wow! your tomato recipe must be the best in the world a tutorial would be interesting.

Mine is quite simple and quick, I haven't made a tutorial yet because I think that it can be improved

Yeah, but it's only good if people like their sauce nice and mild and very Sicilian-made. XD And I think my grandmother only takes so long in making it because she's almost 80. My dad takes much less time on his sauce, using the same ingredients, and it tastes quite similar.

Ah, I see. Well, improvements can be made in everyone's cooking. I definitely know that I can do much better.

lol, if you want to taste a good sauce with a lot of history, go to a small, family-owned Italian restaurant. They almost always use family recipes, and it is phenomenal!

I would more than gladly eat in a place like that, but sadly there's not many italians in Mexico I've never seen a small traditional restaurant, and I've been told that the italian food we eat here is not really italian... it's a bit too condimented and has too much garlic to be 100% authentic italian.

Aww...yeah, but some Italians do put a lot of condiments in their sauce...but not many...

I'm sorry that Mexico doesn't have many authentic Italian restaurants....that's pretty lamesauce. I'll learn how to cook my family's recipe and make a tutorial out of it someday, so you can try it, too. (that...may take a while, however. My family doesn't really make red sauce anymore because it's so time consuming and you have to be alert the entire time you make it.)

ha-ha, though I'm going to go through a lot of trial-and-error before anything. I was only given the directions on how to make the sauce when my dad told me all of the "Italian secrets to cooking."

Well, not all. Just the small things. Like, sauteing your onions and parsley (or basil, depending on what you're making) in olive oil before you add your garlic. You don't want the garlic to be burned, you just want it slightly golden, otherwise the garlic will take over the flavor.

And cook some sausage in the oven for a little bit and put it in tomato sauce. It adds a nice flavor, even if you don't like sausage.

lol, I know that much...but I can't even remember the little things that my family just does...like, they always know just when the sauce is mild enough to serve, or how much pepper to add, etc....XD

im going to make these tonight! Im so excited!
I was searching some youtube videos and found this lady who had an awesome rolling pin! It had little ridges on it so that when you roll it vertically and horizontally, it makes squares and and then she cut it with some of those wavy pizza cutter looking things sorry, i cant really explain!
I was looking into the kitchenaid ravioli attachment, but it was 140 dollars! So i guess it only comes in handy for stores who can over price the ravioli and make the money back easily, eh?
It was so cool though! all you do is roll out the pasta, put it in the attachment, add the filling just on top and roll! It cuts it and fills it at the same time so all you have to do is peel them off eachother

OMG I've seen those ravioli attachments! They're so amazing, I've always wanted to buy one but I can buy two pasta machines for that price still they're pretty amazing and they make things so easy... I didn't know they were that expensive, thanks for letting me know so I don't dream about them anymore

Exactly its so expensive! If it was 40 bucks id even consider it but 140? Wayyy too much. Im surprised people even buy that attachment lol

lol your conversation just made me grin.. XD we have a lot of those "rolling pins" at home... but only one is precious... and hand made... that was actually expensive...because is special and decorated...( like this one for ex [link] made using two old coins) but you can find those things for less than 40€ for sure...problem is finding them where you live... btw there are some really special rolling pins here that make the pasta really cute and decorated like a lace

i bet i can find something better at my friend's house...i should ask...
we use those for decorated bread and for some kinds of sweets... and old old ladies can really make them look like a doily
