Β I recently had pork chops, baked potatoes and mixed vegetables. It was super tasty but I also liked it cuz my family made it together and we always wind up being silly when we're all in the kitchen <3
Β I used to hate cooking since I was terrible at it. Now I'm ok at it. I enjoy making 1 pot casseroles cuz I'm lazy and don't want to clean a ton of pots after dinner lol.
Β Blackened tilapia is one of my favorites cuz sometimes I just want to scorch my mouth with spice. Β You can tone down the spice to suit your taste buds

I'm currently enjoying cold salads and other simple foods due to not really feeling like doing any advanced cooking alone. I normally quite enjoy both cooking and baking, especially with, or for someone.
For some reason couscous (don't forget the chicken bullion) with feta cheese, olives and whatever vegetables I happen to have laying around topped off with pepper and lime is something I find tasty right now.
My favorite recipes are the resulting stewy stuff I get by throwing things into a pot and wating for about half an hour with some stirring while it makes itself, served with pasta or rice due to potatoes not being very tasty when reheated.
One of my most favorite recipes that I've managed to come up with myself are a thai inspired (thom ka ^_^) chicken stew with rice.
Scale up or down amounts depending on the size of can of coconut milk and the amount of chicken, start the rice around chopping the vegetables.
Raw chicken meat cut into small bits (cut these last due to being able to use the same cutting board), coconut milk, onion, bellpepper, tomato, thinly chopped fresh ginger, fresh lime (or juice with or without a bit of peel), chili (powder or flakes are fine). Garlic if one wants to have some and some butter or oil for the pan/pot.
Chop all the vegetables and the onion, add onion, chicken and grease to the pan and fry it.
When the chicken has got some colour add the coconut milk, ginger and lime, when that's warm add the vegetables. Let cook until the rice is done, salt and pepper to taste.

Recently I ate some chocolate ice cream. I enjoyed it cause it's my favorite taste of ice creamΒ I'm bad at cooking and I wish my future boyfriend/girlfriend/partner could cook better than me or I will eat only junk foodAs I said, I'm bad at cooking, but I can cook boiled potatoes!Β Here is my recipe:Β - Wash potatoes you are going to cook
- Put them in aΒ large saucepan
- Add as much cold water as you need to cover your potatoesΒ Β Β
- Add garlic, peppercorns,Β bay leaves and some salt
- Bring to a boil, lower the heat and simmer for 5 minutes (if potatoes are small) or around 8 minutes (if they're big)
- Drain water
- Throw off the garlic, bay leaves and peppercorns
- Put potatoes on your plate and add what you like - salt, butter etc

What I cooked yesterday, chicken and rice:
Put some oil in a pan, heat it up and give the chicken pieces a nice gold crust. Then put it away.
Add some oil if you have to, then saute some red bell pepper, onion, leek and garlic, all diced small (I also added some celery, just 'cause I had some around). Let it cook for about 5 minutes, then add some tomatoes, without the skin and seeds, also diced. Get some white wine in there, turn the heat to max till the alcochol evaporates and you pour yourself a glass 'cause you deserve it.
Now you add rice, as much as you want, but keep in mind that it usually doubles in size, and stir until it's all mixed up properly. Get the chicken back in there again and add broth (if you have it) or water, ideally hot. Half cover the pan and, once it's boiling, bring the heat to a minimum. Add a bay leaf, pepper and whatever spice you want (traditionally, this one's done with saffron).
Now, the green peas: if you're using a can, wait for 10 minutes or so, then add it, stir once and wait till it's done. If you're using dried ones, water them for some hours, then give them about 30 minutes of boiling and add them with the chicken (the best way, if you ask me). It they're of the frozen kind, 5 minutes before the thing's done.
In any case, it's an easy and (except for the saffron) cheap recipe. Just remember to not stir it too much. Rice has starch, so every time you stir it, the thing gets released into the broth and makes things stick to the pan.
Oh, and I eat without salt but, if you do, you should probably add it while sauting the vegetables.
