I've been in the Soul Eater fandom for a few years now, and it really seems like unless shipping art/fic is SoMa, SteinMarie, or maybe Kid/Crona, it's not gonna get that much attention in the long run. even if it's like a 30 chapter fic you you've worked on for over a year and you released for a major fandom event SPECIFICALLY to get it noticed. Like there's that small burst of activity from right after you first post something, and then that's basically it unless you're popular in the fandom. Which isn't usually gonna happen unless you ship SoMa. (idk that's just my experience)
But yeah, you're right about the M/M and F/F ships getting the least attention. Like for one example, Jackie and Kim have a whole lot of subtext, especially in NOT!, but the fanbase for them is pretty much dead.

I was super anti-Soma specifically because I couldn't escape it. But... it took me 8 years and now, finally, I accept it. That, and I realized that maybe my fic would get more attention if I finally wrote that pairing in as one of the main plots instead of aggressively try and avoid it. If you can't beat them, join them ¯\_(ツ)_/¯ I guess, I'm not popular enough to afford not just giving in LOL

Personally I accept that SoMa's a viable ship and I can understand why so many people like it, but I'm still gonna create content for the lesser known pairings I actually ship because it's what makes me happy. Even though I'm pretty sure I may seem bitter sometimes when I talk about the lack of variety in the SE fandom, I don't actually hate SoMa. If that pairing's what someone likes, that's great for them! It's their thing, I'm not gonna judge.

I was literally such a petty and bitter middle schooler so I was like " I HATE SOMA" to be a little edgy butt. I acknowledge that Atsushi ships it, I acknowledge that it's actually a pretty realistic ship, I just wish it wasn't so "in your face" wherever you go in the fandom. I've matured a lot since 6th grade ( LOL, I HOPE ) and I honestly don't mind it at all, ship whatever (as long as it's not something absolutely gross like, pedophilia or incest- I'll fight anyone that ships an adult/parent with a child). But for a really long time, I tried to avoid it and realized it'd just be so much easier if I gave in to it.
I think my favorite ships within the Soul Eater fandom are TsuLiz, CronaXMaka, CronaXPatty (I know, weird), and BlackStar and Maka. I don't really talk about them a whole lot (because I'm obsessed with OCs ) but I have a lot of personal reasons why I like those specific pairings.

Yeah, I don't usually judge what other people ship unless it's super gross stuff like you mentioned, either. One good thing about SoMa being the most popular ship is that it's not one of the weird and/or gross ships like Stein/Maka, Crona/Ragnarok, or Medusa/Maka (why there's shippers for that last one especially is something that seriously puzzles me. I don't really get the other two I mentioned either but...yeah)
And you've got a pretty good ship list there. As you'd definitely know if you've went through my gallery, I'm a fan of Crona/Maka, and even though I don't draw fanart of them nearly as often, Tsubaki/Liz is also one of my favorites. I don't personally ship Patty/Crona or Black☆Star/Maka, but like most pairings, I'm cool with them.

(( The mention of the Medusa/Maka ship reminded me that Asura/Maka exists and I died a little inside lol ))
And yeah, the last two of mine you mentioned are not very common at all - they're mostly ships of mine simply because of personal reasons, I totally understand why they wouldn't be common ships lol

Oh God, I forgot about Asura/Maka. *shudders*
Although I thought Black☆Star/Maka would be a more common ship because not only are they cute together, but their dynamic is really good. (the manga revealed they were childhood friends, and usually shippers tend to eat that trope up)
