Not a lot of people do think of Sour Cream, but for some reason, I just really like him.
Peridot is my favorite though.

Yeah, I see what you mean.
Probably the most fleshed out minor character is Ronaldo, mostly because of his blog which actually exists, it's managed by the staff of the people who make SU.
