Even if they are everywhere on Cauldron, it still seems like a random thing to use as a mascot for the series as a whole. Most things with a cute mascot character have one because they are sidekicks or something prominently featured in the main story of the series. A character that is recurring or important or something. Disgaea has Prinnys and they're more like lackeys for the main characters. But they have their own personality to offer and appear often. Pokemon has Pikachu and I don't even need to tell you why they use him as the mascot. As for the examples you already gave, Fairy Tail's Exceeds have their own story arc and Happy is not just some random animal you see everywhere. But I don't know much about League of Legends... You seem to be focusing too much on the thought of having the cute mascot animal, but you aren't seeing that it might be too late to introduce one at this point.
Also, trying to add them into the story now would be kind of abrupt. It'd be better if you used something more plot-significant or something that has already been established if you MUST have a mascot. Not everything NEEDS a cute animal mascot though. I'm trying to think of what might meet the qualifications, but I can't think of one. The part where most of these mascots are introduced is near the beginning anyway. But we're long past the beginning now. And even if you have introduced them before, they haven't been featured nearly enough to stay relevant.
These are like the porgs from Star Wars. Cute, but essentially irrelevant and just something cute for the sake of having something cute. Not needed at all but still there. Sure, they may be beneficial in some way, but that doesn't make them important to the plot. They're a sudden inclusion that is just there and shouldn't be deemed worthy of being a mascot. You shouldn't need something cute to keep people interested or to draw them in. Because that's exactly the purpose of cute mascots. Do you think your work isn't good enough to draw people in on its own? Do you think a cute mascot will add something the series was missing? Sure, they expand the lore a bit thanks to the extra details, but that still makes them more or less just another creature that exists in the world. I'd say keep them around, have them get a bit involved to show they are important to everyday life in Cauldron, but don't use them as a mascot for FantasTech. But this is all just my opinion, so make your own choice regarding it.
