Description Fusion is a new style of cooking; it's about combining products with different origins into 1 dish and searching for new textures, colours, shapes of exotic products.

This is my vision of fusion with a first example :Salmon

I've tried to combine different textures and flavours:

Seared Salmon (crispy) with apple gelee (sweet and soft)and caviar (salty), avocado mousse with mint (soft, refreshing) on crispy gingerbread (crispy and savoury) and Saltcristals...
