First, use a weapon with Fire Damage. My best play through had me starting as a Pyromancer and growing into Intelligence and Faith most of all, then using a Chaos weapon. Use armor that protects you from Magic more than anything else. Chaos Fire Orb works well in this fight because it creates a pool Aldrich can slither into. He's not all that hard with the right weapon and armor.
Also, Aldrich is the slimy shapeless mass that makes you nauseous to look at.

Its hard for me to comment on the whole difficulty of DS bosses as I'm a Bloodborne players. I've heard a lot more DS players saying Bloodborne is harder, but my assumption is that its just hard to transition gameplay preference from defensive to offensive, so chances are Bloodborne players will think DS is more difficult.
If it helps, it took me a fair amount of tries (6, I believe) to beat Gehrman, that fast bastard.

It's harder only for those who are used to rely on shields because they can't dodge properly. Other than that shouldn't be that much difference

Yeah, that's my theory. Same thing with Bloodborne players- it would be harder to do a Souls game coz you're playing with a shield rather than your gun (or, granted, you could technically do Bloodborne with a shield, but one of them suck and the other one is only in the DLC).

Fair point, but that's a bad idea for most. Lotta timing going into a two hander, normally, coz they're too heavy. More damage, more risk. Main reason I don't really use Ludwig's Holy Blade (I stick with Saw Cleaver or, when I feel particularly audacious, the Whirlygig Saw)

Eh, I usually do just that. I tried to use faster weapon, but it's still easier to do 1-2 hits with a hard hitting, but slow weapon and then back away and wait for the next opening. At least with the bosses.

Depends on the boss, really. Souls games have a very good idea of strategy diversity, and it does take a bit of study to find the best approach to the bosses.

Naaaaah, buffed Greatsword all the way. For the slow ones and for the fast ones. It destroys them all the same. Same shit for DS1. And Dragontooth for DS2.

Boss fight summary as follows:
1) Run towards him while he shoots soul spears.
2) Hit him once or twice
3) chase after him after he disappears.
4) Repeat steps 1-3 until phase 2 starts
5) Run towards him while he shoots little soul arrows and big soul spears.
6) Hit him once
7) Get one-shot by arrows.
8) Repeat steps 1-6
9) Spend half a minute running away from arrows.
10) Repeat step 5-6 and 9
11) Chase after him when he disappears
12) After 30 minutes, most of which spent running away finally kill the boss.
13) Celebrate killing the most evil character in Dark Souls.
14) Cry in the corner as you realise he will be worse in NG+ and the fact you spent 8+ hours trying to kill him.
That was how my first encounter with Aldrich went, and yes I did play 8 hours non-stop before you ask.
This was the boss fight that taught me to invest in vigour, as he two shot me with pretty much every attack. Otherwise a very interesting change of pace for a boss fight and I love fighting him as a cleric, really he is a mixed bag for me, not sure if I love or hate his boss fight.

Yep, him spamming Gwyndolin's spells weren't too fun, and I bet that you had to roll and abuse the pillars for most of the fight as well. I still can't believe that it only took me two tries.

At first - yes. But then I understood that it doesn't work, then I noticed that if you're close to him, he mostly uses melee attacks which are easy to dodge

It's a he. And the trick is to just quickly run up close to him and attack. Because then he'll most likely use a melee attack, which is easy to dodge or teleport
