I did this fall semester last year! The professor had us do a quick design challenge--we were given the options of a knight, peddler... and some other third thing. We were to design a character fitting that description, but also their steed, whatever that may look like. The design had to include a somewhat believable way of steering the steed too. I decided to do a peddler, and caught a loophole that we didn't have to make a human character... so here he is! A little kangaroo mouse and his traveling shop atop an Ostrich! He basically collects things he finds, and repurposes them to turn around and sell! In hindsight, the mouse is probably a bit too big in comparison to his Ostrich
