There's an earlier post in response to this question: sadly I've learned little sense then. However, I do strongly recommend looking at scientific papers on the human visual system and the way camouflage works--those have been a tremendous help for me.

If you're looking for information and inspiration, try looking around for information on optics, visual systems, object recognition, and disruptive coloration in the natural world. Just using Google for those alone should give you all kinds of good stuff!
As for me, I'm still working on some ideas, and grappling with math.

I have a very poor understanding, but I'll do my best.
Environments tend to have objects of certain sizes and shapes distributed in certain ways. Take a look at the sand on a beach, and you'll see a bunch of different colors of sand. It won't be evenly mixed, either. Plus there's shells and rocks and stuff. All this tend to be ditributed in characteristic ways.
You get the same thing in a forest. Groups of smaller objects (leaves) all bunched together, not evenly distributed like static, and in groups of certain shapes and sizes.
Same thing goes for just about any environmental feature you can think of.
This combination of typical sizes and shapes is--I believe--what is called the "visual frequency" or sometimes "texture" of an environment.
Texture matching, or visual frequency matching, is the act of making your camouflage match this. Basically, if you got the right shapes in the right places, your camo blends a lot better!
How is it done? Math! Lots and lots of math. Determinng visual frequency--or texture--and creating or analyzing images based on that is a huge subject in optics, machine vision, and computation.
I am trying to understand this stuff, but the last time math and I met we had a throwdown and math left me coughing teeth onto the floor. I have it in a compliance hold now, so there'll be no more of that, but I don't know if I'll ever get it to say uncle. Some of what you see in my latest patterns are the result of this fight.
All is not lost, though. Even if you don't have the math skills, or access to image analysis software, trying to do things by eye and get the general texture will probably help improve your camos and lead you to learn all kinds of cool stuff besides!
