You know what a sucker I am for mermaids.

Also very impressed by the wire-jewelry Ouroborus.

Know where I can get some >strong< 26 gauge stainless steel wire, single strand? All I can find locally is soft steel.

I should finish the other piece of wire wrapped work I have sitting beside my table.

On that wire, what is the application? And are you looking for a local source?

Restringing a potato slicer; what the hardware store has scarcely cuts the mustard before stretching and breaking. And I have a hard time finding 26 gauge at all.

Found something on Ebay, we'll see if that works.

Piano wire. Find a music store. If not piano then guitar/banjo/violin. As we used to say Tighter than an "E" string. It's stiff and strong. Might be a bit odd to use. I prefer the Oxo peelers. Nice ergonomic shape, cuts on the push and the pull. Think slices are the result. A mandolin is a very good alternative and you cna change the type of slice and the thickness.
