Amber's not much for strategy, she prefers to be offensive and try and knock her opponents out as quick as possible (especially if they're strong). However in the NOCT situation, she'd be a bit hesitant about attacking because she would never kill on purpose. But if it came down to the wire where it was lose one of her pokemon or kill, she'd give the order to kill. (Let me know if you need more info than that)
As for her pokemon, Gypsy (Arbok) would dive head first into a to the death battle. She very violent and would probably disregard Amber's orders and try her best to kill her opponents.
Opal (Chansey) is a baby and has no idea what's going on and thinks this is all a big game. She'd listen to Amber and attack, but she'd be very happy about it.

Amber would only order her pokemon to kill if her pokemon were in immediate danger. For NOCT, Amber would be in denial for the first half of the battle, but as she realizes this is really happening she'd order them to kill. Amber would hate giving the order to kill though, she hates killing and would probably be fighting back tears as she gives the order to kill.
