well, cuz i recognized the lamp base on next to your sugar showpiece and the blue fabric hung on the gate to the back room of K5. i just graduated from there in oct 08. who were your teachers?

mainly i had Chef Connie Jenkins and Chef Emily Smith because they were more willing to teach pm classes. i did have Gesik for breads, Walsh for laminated doughs, and Ransom as a secondary for 211. for the two culinary basics classes i had Vitelli. ive seen Waldie around, we had him for like 4 days cuz jenkins had something to go to.

Yiu have alot better memory then i do. But Gesik was good for breads, jenkins i heard was amazing, did u have fun in advance decorating and such?

tons of fun. the last three classes were awesome. i had a better memory of it only because i graduated in october 08. i got back from my externship like a couple weeks before the actual graduation. Jenkins was awesome, i love her. some didnt get her, cuz they took her criticism the wrong way. she will cut you down about what is wrong with your work, but you have to take it and build upon it. i remember the teachers cuz they were really cool to work with.

Yea, I prolly wouldnt have delt to well with that. Mostly because criticism to me i take personaly,even when its bettering your work ya know? Where did u do your externship? Did you enjoy it? I loved mine....

Big Cedar Lodge, Ridgedale, Mo. didnt really care for the place. not a lot of specialties to them, more general baking. i enjoyed the people. it was weird though, most of my co-workers were english interns. although, my fav was Toria, the lead pastry when the other was off. she was awesome, and also did ice carvings. the other pastry chef, dan, i didnt really like, some of his skills are great, even speed at some things, others were not so quite up to par. i did better gumpaste work than him. i dunno, right now, i guess im not fit for a resort kitchen. id rather do something a little more specialized, cakes, fine pastries, fine desserts, something for demanding of my more advanced skills.
this past week ive been working on a sugar sculpture for a competition today, but didnt get up early enough to get there and enter. i was sad. i have the parts so i will still put it together, i just wont get anything for it. i went ahead to the competition later on and saw that i would have had the only sugar sculpture in it.

i will post some as soon as i get them off of my camera and edited. i would try most things at least once. i am doing absolutely nothing now, at the moment there are no pastry jobs. im waiting til i get to nashville to find a job. cuz my lease is up at the end of march and i want to get the heck out of the state of az. so lately ive been doing side jobs and my own projects to keep me busy and my skills up.
