It was quite surprising to know that in fandom he considers as a different creature.

I have the same opinion, I see the Wendigo in the show as a visualisation of the evil brought by Hannibal, and a way to show Will is instinctively percieveing it. It's Hannibal's dark aura, in a way.
Putting the Wendigo in the role of another (acting) character is creating an alternate universe. It's what I did with the pet wendigo. ^^
