I looked at the first three comments and I can already tell that everyone seems to have forgotten that Demona can´t die unless McBeth kills her.
And if you want to say that this would be unfair because Batman couldn´t possibly win under these circumstances: Yes, yes it is. But so were
Pikachu vs. Blanka (Blanka is nearly immune to electric attacks, and Pikachu can´t pull off much more)
Hulk vs. Doomsday (Doomsday can´t die twice by the same means, which included brute force, a.k.a. Hulk´s only means of attack)
Charmanda vs. Agumon (Digimon are OP unless compared to other Digimon)

Demona might give Batman some trouble, but I think Batman will eventually come up with a strategy and beat her.

I imagine that Demona might somehow team up with Ras'al'ghul, maybe promising him immortality and power. I'm not sure what exactly the plan would be, but with Demona, it would have to result in widespread destruction in some way.
Batman might find out about this alliance through Talia Al'Ghul, who turns to 'her beloved' to help save Ras'al'ghul and Gotham City from the gargoyle who would destroy both.

However, the idea of a gargoyles/batman crossover is a great one.

I think that Zanatos would make a better opponent for Batman.
They are both billionaires.
They are both gifted in science.
They are both masters of martial arts
Plus as business man they don't have to fight each other on the battlefield they could fight each other in business.

Batman is adament about not killing his adversaries, so with Demona an enemy that can't be killed he would not have to hold back!

More than likely I'd see it as a robbery fro some mystical artifact. Something of great magical power. Batman would be monitoring it thinking that one of his known enemies would try to steal it. Demona, meanwhile, would know of it and try to steal it to either A) commit the genocide of the human race, B) enslave Goliath and the Clan to her will, C) make Angela hate humanity, D) at least kill Elisa Maza, or D) to make her magics more powerful. Monitoring the situation, Batman would arrive shortly after the robbery or even while it's going on...
Demona's strengths: She's stronger and faster. She doesn't need technology to see in low light. She can glide. Unless Batman is really Macbeth, she is immortal. She's a practiced sorceress. She is incredibly patient with regards to master plans and can be quite cunning at times, but much of this is through manipulation... and she isn't quite that patient with regard to short term goals.
Demona's weaknesses: She has no control over her temper and is easily enraged to a point where she'll make sloppy mistakes. Despite having a millennium's worth of life, she has little to no combat training beyond her experiences in medieval Scotland. The result is that in fights her tactics are simple and designed to overpower her opponent through brute force alone. Her magic, while powerful is dependent on her having some artificial object to channel it. Without something like the Grimorum Arcanorum, she can not actually cast magic and she doesn't carry the spell book or the spells in it are not always with her. What she can do with the artifact will be determined by the artifact's abilities, not her own.
Batman's strengths: He's a master strategist and analyst of his opponents, allowing him to either use the environment or the technology he has to his advantage. He is a master at most, if not all known human forms of martial arts. He has his own personal fortune at his disposal to equip himself with combat gear that small countries would envy.
Batman's weaknesses: He can be surprised, particularly be foes he doesn't know fully. And even if he does know the foe, he may not always have the time to put the plan together. If given the time he could set up a plan that could kill Superman, but if forced to improvise, he's forced to rely more on direct battlefield tactics (which he is also good at, but not as good as the bigger picture with regard to strategy)... and against unknowns, this could compound the obvious weaknesses... while he is better trained and in terms of skill is by far the better warrior, he is not as strong or as fast as Demona and his physical attacks may not be strong enough to have a full effect on Demona. In addition, his belt's supply limit is not infinite. He can run out of what he has in the utility belt...
My verdict... At best Batman figures out Demona's anger management issues and manages to trick her into a serious mistake that allows him to subdue her. Most likely... it ends up a "draw" of sorts. Batman either destroys the artifact or recovers it, but fails to land a significant blow on Demona and reliant on his own training just to avoid taking a similar blow from her and she flees before sunrise.

Demona travels to Gotham to track down an ancient artifact and steal it, but Batman is on the case and confronts her. At first it would seem like a draw with Demona's growl and Batman's stare, but when they do lock fists, Batman would play off of Demona's aggression and temper and incapacitate her, first with knockout gas then he would hog-tie her (which works out for both of them as she can't be killed and he doesn't kill).

Now this would be interesting. An insane racist, Human Annihilation seeking, dangerously smart Gargoyle girl, vs a Sherlock like detective, with a combination of magician escape tricks, and Martial Arts styles, a fight between these two would probably be very crazy.

What would the story be?

Well now that's the problem there, one idea is that some Gotham City Science Experiment goes wrong bringing Demona to the city, she of course having such hatred for Humans would soon lash out against the citizens getting Batman to come after her. The fight would start soon after Batman's arrival. But from there there's only a couple of outcomes: 1) If the fight Drags out till dawn then Demona would revert to Human form likely stopping the fight, since Batman would likely think her Gargoyle form is a cursed form he'd contain her while he looked for something to break the "so called" curse. 2) Demona being Immortal would be a problem, Batman wouldn't be able to kill her even if he wanted to, but if she managed to defeat Batman then she could end up facing every hero related force that Batman ever touched. Demona would not be going anywhere for a while.

But what if Batman came to New York?

In that case Wayne could be going to New York for a business meeting with Xanatos, and Demona comes in to try to ruin the deal, either by making her own company more appealing just long enough to try to assassinate Wayne, or she tries to kill two birds with one stone and attempt to kill them both. Either way can lead to Wayne having to fight Demona, given Xanatos and Demona's access to underground networks both can have an informant discover Wayne being Batman: Xanatos via Illuminati scum, and thanks to Demona having to deal with Hunters over the Millennium would of course learn how to recognize potential Hunters without their masks. During the confusion of the fight Xanatos (not wanting to end up dead, and having to reveal what he knew about Wayne) would reveal some new gadgets for Batman, and from there (though an investigation would be needed for Wayne to figure out how his identity was compromised) Wayne would start fighting with Demona with more then just his fists, from here a couple of out-comes are possible: 1) Wayne revealed to be Batman would eventually defeat Demona and take her to Arkham Asylum for rehabilitation. 2) Thanks to the millennium of fighting Hunters, Demona would be able to (after a bit of a fight) defeat Batman, only having to run thanks to Goliath and whats left their clan coming.

Probably would've already done so, IF I knew enough about one/both the characters involved in each fight. Reason why is: because I've not heard of said character's world, I've heard of them BUT don't want to have anything to do with the world, OR I heard of them BUT have yet to get into it. But I'll see what i can do.

If Batman can defeat Dracula, I don't see why he couldn't defeat a gargoyle.
