I was thinking more along the lines of that being his berserk state. (if I remember correctly) is he gonna be totally nuts when you go back to their arc/s or has it just infected the rest of his iris?

don't know if answer it will be an spoiler, but I doubt so.
the de-pigmentation on his iris was caused by the special brain procedure the scientist did to him to made his mind more human or stable, almost as a side effect.
until know this change of mind wasn't very stable under very stressful situation, specially under damage, which causes his healing or regenerative abilities act and repair his tissues, the same thing that heals his wounds is also trying to reconstruct his old brain scheme and modifying the changes the scientist made, I guess they didn't though the regeneration would also affect his brain in that way; for Laura is different, her mind is sane and designed that way, so her eye pigmentation can't change.
the eyes coloration was just a side effect of the modifications the scientist made, may have been something fortuitous, so they didn't paid attention since it wasn't really important

Not a spoiler per say (i've read the comics enough times to see where it's from) but not something I would have guessed. Unless you meant it as something that would come out in the comic later.
I guess that figures with how he's becoming more unstable the more he fights.

not really, just the kind of stuff you have made up as a theory, didn't planned to reveal it as something important, the real deal was to see Adres becoming more unstable
